Ingredients
1 Cup of almond flour
¼ teaspoon of salt
½ teaspoon of baking soda
4 eggs
Vanilla “as much as your heart desires “
2 tablespoons of maple syrup (organic)
1 teaspoon cinnamon
Almond flour waffles are a great alternative to traditional waffles. If you are looking for a gluten free, low carb option, almond flour waffles are a go to. They are super quick to make and don’t require much prep work. They are versatile and packed with flavor. I like to make these ahead of time and store them to snack on during the week. They can be eaten alone, paired with your favorite syrup or honey. Or if you're feeling adventurous you can add some yogurt or fruit. The sky is the limit on how you chose to dress up your waffles.

Saturday mornings at my house are all about quality time. We get together as a family and eat breakfast, dance to music and laugh together. This is usually the only time of the week I prepare a large breakfast. My kids are kids, so they usually want anything sweet. Waffles are always a must on Saturdays; however, I stick to the traditional kind for the kids and leave the healthier versions for myself and my husband. I know this sounds like a lot of work preparing two separate batches of waffles but it's worth it if you're willing to spend a few extra minutes on yourself.
When it comes to choosing the perfect almond flour, I personally prefer a finer grained flour. One of my favorite brands is Bob’s Red Mill Super Fine Almond Flour. I've noticed through many failed attempts, that the finer the flour the less grainy your waffles will be, which allows for a more enjoyable fluffy dough.
Instructions
Warm up your waffle iron on med to high heat
In a large mixing bowl add your flour, baking soda, salt and cinnamon. Mix all ingredients until blended
In a separate bowl, whisk your eggs and add your vanilla extract and syrup directly to your whisked eggs.
Pour your wet ingredients into your dry mixture and mix until you have a soft dough.
Unlike traditional waffles, my almond flour waffles are a bit denser with a spongy middle and crisp edges. I usually pair these with eggs, turkey bacon and a fresh tossed green.
NOTES
Your dough will not be as thick as traditional waffles but don't worry, the end result is still similar.
MEAL PREP NOTE: Completely cool and store in an airtight ziplock or container. Reheat from frozen in a toaster or oven to prevent sogginess.
